Instructions

  1. Preheat the oven to 350°F (175°C) and grease a muffin tin.

  3. In another bowl, whisk eggs, buttermilk, vanilla extract, and food coloring.
  4. Combine wet and dry ingredients and mix until smooth.

  6. Fill muffin cups halfway, add a small piece of chocolate in the center, and cover with more batter.
  7. Bake for 12-15 minutes, until edges are set but the center is still soft.
