  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 can diced tomatoes
  • 4 cups chicken broth
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 cups corn
  • 2 tablespoons fresh cilantro, chopped

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, garlic, and red bell pepper; sauté until softened.
  3. Stir in diced tomatoes, chicken broth, chili powder, cumin, salt, and black pepper. Bring to a boil.
  4. Add shrimp and corn; cook until shrimp are pink and cooked through.
  5. Stir in fresh cilantro before serving.
