  • 2 cups shredded cooked chicken
  • 1 cup queso cheese
  • 8 corn tortillas
  • 1 can enchilada sauce
  • 1/2 cup diced onion
  • 1 tsp garlic powder
  • 1/2 tsp cumin
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the shredded chicken, queso cheese, diced onion, garlic powder, and cumin.
  3. Soften the corn tortillas in a skillet over medium heat.
  4. Spread some enchilada sauce on the bottom of a baking dish.
  5. Fill each tortilla with the chicken mixture and roll them up.
  6. Place the rolled tortillas seam side down in the baking dish.
