  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 1 cup pumpkin puree
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 8 oz cream cheese, softened
  • 2 cups powdered sugar

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix together flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  3. In another large bowl, cream together the butter, granulated sugar, and brown sugar until smooth.
  4. Add in the pumpkin puree, egg, and vanilla extract; mix until combined.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Drop spoonfuls of dough onto a baking sheet.
  7. Bake for 12-15 minutes, or until the edges are lightly golden.
  8. Let cool before frosting.
  9. For the frosting, beat together the cream cheese and powdered sugar until smooth.
  10. Frost the cooled cookies and enjoy!

Notes

  • For a stronger pumpkin flavor, add more pumpkin puree.
