  • 1 cup canned pumpkin
  • 3/4 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup cream cheese, softened
  • 1 cup powdered sugar
  • 1 tablespoon milk

Instructions

  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In another bowl, combine the pumpkin, granulated sugar, eggs, and vanilla. Mix well.
  4. Gradually add the dry ingredients to the pumpkin mixture until just combined.
  5. Spread the batter evenly on the prepared baking sheet.
  6. Bake for 15-20 minutes or until a toothpick comes out clean.
  7. Let it cool for a few minutes, then roll it up with the parchment paper and let it cool completely.
  8. Meanwhile, beat together the cream cheese, powdered sugar, and milk until smooth.
  9. Once the roll is cool, unroll it, spread the cream cheese mixture, and roll it back up.
  10. Chill in the refrigerator for at least an hour before slicing.

Notes

  • Make sure the pumpkin is pure pumpkin, not pumpkin pie filling.
  • Feel free to add nuts for extra texture.
