  • 2 cups powdered sugar
  • 4 tablespoons milk
  • 1 teaspoon vanilla extract for frosting

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, mix pumpkin puree, sugar, oil, eggs, and vanilla until smooth.
  4. Gradually add the dry ingredients to the wet mixture, stirring until combined.
  5. Drop spoonfuls of batter onto a baking sheet lined with parchment paper.
  6. Bake for 15-20 minutes or until a toothpick comes out clean.
  7. Let cool completely before frosting.
  8. For the frosting, combine powdered sugar, milk, and vanilla extract, mixing until creamy.
  9. Spread frosting between two pumpkin cookies to make a gob.
