  • 1/2 cup vegetable oil
  • 1 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 3 large eggs
  • 1 can (15 oz) pumpkin puree
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake tin with paper liners.
  2. In a bowl, mix flour, baking powder, baking soda, salt, and spices.
  3. In another bowl, combine oil, sugars, and eggs until smooth.
  4. Add pumpkin and vanilla to the wet ingredients.
  5. Gradually add the dry ingredients to the wet mixture until just combined.
  6. Fill the cupcake liners about 2/3 full with the batter.
  7. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  8. Let cool before frosting.

Notes

  • For an extra kick, add chocolate chips to the batter.
