- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 teaspoons ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground ginger
- 1/2 cup vegetable oil
- 1 cup granulated sugar
- 1/2 cup packed brown sugar
- 3 large eggs
- 1 can (15 oz) pumpkin puree
- 1 teaspoon vanilla extract
- Preheat your oven to 350°F (175°C) and line a cupcake tin with paper liners.
- In a bowl, mix flour, baking powder, baking soda, salt, and spices.
- In another bowl, combine oil, sugars, and eggs until smooth.
- Add pumpkin and vanilla to the wet ingredients.
- Gradually add the dry ingredients to the wet mixture until just combined.
- Fill the cupcake liners about 2/3 full with the batter.
- Bake for 18-20 minutes or until a toothpick inserted comes out clean.
