  • 1/2 cup sugar
  • 1/2 cup unsalted butter, melted
  • 2 packages (8 oz) cream cheese, softened
  • 1 cup pumpkin puree
  • 1 cup sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground ginger
  • 1/4 tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter; mix well and press into the bottom of a 9-inch springform pan.
  3. In a large mixing bowl, beat the cream cheese until smooth. Gradually add the pumpkin puree and sugar, then mix until combined.
  4. Add eggs one at a time, mixing well after each addition. Stir in vanilla, cinnamon, nutmeg, ginger, and salt.
  5. Pour the pumpkin cheesecake mixture over the crust in the springform pan.
  6. Bake for 55-60 minutes or until the center is set and a toothpick inserted comes out clean.
  7. Allow to cool before refrigerating for at least 4 hours.
  8. Serve chilled and enjoy!
