  • 1 cup pumpkin puree

  • 4 large eggs

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger.
  3. In a separate large bowl, combine the sugar, pumpkin puree, vegetable oil, eggs, and vanilla.
  4. Gradually add the dry ingredients into the wet mixture, stirring until just combined. If using, fold in the chopped walnuts.
  5. Pour the batter into a greased loaf pan and smooth the top.
  6. Bake for 60-70 minutes or until a toothpick inserted into the center comes out clean.
  7. Let it cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
