Patriotic Red White and Blue Deviled Potatoes

Ingredients

  • 12 baby potatoes
  • 4 hard-boiled eggs
  • 1/2 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup blue cheese
  • 1/4 cup chopped fresh chives
  • 1/4 cup diced red bell pepper

Instructions

  1. Boil the potatoes until tender, then let them cool.
  2. Slice the hard-boiled eggs and separate the yolks from the whites.
  3. In a bowl, mash the yolks and mix with mayonnaise, mustard, vinegar, salt, and pepper.
  4. Fold in the blue cheese, chives, and red bell pepper.
  5. Fill the potato halves with the mixture and top with diced egg whites.
  6. Chill before serving.

Notes
