  • 1 pound chicken breast, diced
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup broccoli florets
  • 1 cup cherry tomatoes, halved
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Cook the tortellini according to package instructions. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the diced chicken and cook until browned and cooked through.
  3. Add the minced garlic and sauté for 1 minute until fragrant.
  4. Stir in the broccoli and cherry tomatoes, cooking for an additional 3-4 minutes until the vegetables are tender.
  5. Add the cooked tortellini to the skillet and toss to combine.
  6. Sprinkle with Parmesan cheese and Italian seasoning, mixing well. Season with salt and pepper to taste.
  7. Serve warm, garnished with more Parmesan if desired.
