One-Pan Bold Honey BBQ Chicken Rice

A delicious and easy one-pan recipe that combines juicy chicken with flavorful honey BBQ rice.

  • 4 pieces chicken thighs
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1/2 cup honey BBQ sauce
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups mixed vegetables

Instructions

  1. In a large skillet, heat olive oil over medium heat.
  2. Season the chicken thighs with garlic powder, onion powder, salt, and pepper.
  3. Add the chicken to the skillet and cook until browned on both sides.
  4. Remove the chicken and set aside.
  5. In the same skillet, add rice and stir until slightly toasted.
  6. Pour in chicken broth and honey BBQ sauce, then return chicken to the skillet.
  7. Bring to a boil, reduce heat, cover, and simmer for 20-25 minutes.
  8. Add mixed vegetables in the last 5 minutes of cooking.
  9. Fluff the rice before serving. Enjoy!

Notes

  • For a spicier dish, add cayenne pepper to the seasoning.
  • This dish pairs well with a side salad.
