- 4 pieces chicken thighs
- 1 cup long-grain rice
- 2 cups chicken broth
- 1/2 cup honey BBQ sauce
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cups mixed vegetables
- In a large skillet, heat olive oil over medium heat.
- Season the chicken thighs with garlic powder, onion powder, salt, and pepper.
- Add the chicken to the skillet and cook until browned on both sides.
- Remove the chicken and set aside.
- In the same skillet, add rice and stir until slightly toasted.
- Pour in chicken broth and honey BBQ sauce, then return chicken to the skillet.
- Bring to a boil, reduce heat, cover, and simmer for 20-25 minutes.
- Add mixed vegetables in the last 5 minutes of cooking.
- Fluff the rice before serving. Enjoy!
