  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a baking dish.
  2. In a mixing bowl, combine rolled oats, flour, brown sugar, granulated sugar, baking soda, and salt.
  3. Add softened butter and mix until crumbly.
  4. Press half of the mixture into the bottom of the prepared dish.
  5. In another bowl, mix lemon juice, lemon zest, and vanilla extract.
  6. Spread the lemon mixture over the pressed oat mixture.
  7. Sprinkle the remaining oat mixture on top.
  8. Bake for about 25-30 minutes or until golden brown.
  9. Let cool before cutting into bars.

Notes

  • These bars can be served warm or chilled.
  • For a sweeter taste, you can add more sugar.
