  • 1 large eggplant, sliced
  • 1 cup diced tomatoes
  • 1 cup black beans
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 cup shredded cheese
  • 2 tablespoons olive oil
  • 1 clove garlic, minced
  • 1 small onion, chopped
  • 1 tablespoon fresh cilantro, chopped

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil and sauté onions and garlic until translucent.
  3. Add ground beef, tomatoes, black beans, cumin, and chili powder; stir and cook for 10 minutes.
  4. Layer sliced eggplant in a baking dish, topping with beef mixture, then cheese.
  5. Repeat layers until ingredients are used, finishing with cheese on top.
  6. Bake for 30-35 minutes until golden and bubbly.
  7. Garnish with fresh cilantro before serving.
