Monterey Chicken One Pan Orzo

Delight in the flavors of Monterey Chicken with a simple twist using orzo in this easy one-pan recipe.

  • 2 cups orzo
  • 4 boneless, skinless chicken breasts
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 cup Monterey Jack cheese, shredded
  • 1 cup cherry tomatoes, halved
  • 2 tablespoons olive oil
  • 1 bell pepper, diced
  • 1 zucchini, diced

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Season chicken breasts with garlic powder, onion powder, smoked paprika, salt, and pepper.
  3. Add chicken to the skillet and cook until golden brown and fully cooked, about 6-7 minutes per side.
  4. Remove chicken and set aside. In the same skillet, add bell pepper and zucchini; sauté until tender.
  5. Add orzo and stir, then pour in water or chicken broth and bring to a boil.
  6. Reduce heat and let simmer until orzo is cooked, about 10-12 minutes.
  7. Stir in tomatoes and cooked chicken, then sprinkle cheese on top. Cover and let melt for a few minutes.
  8. Serve warm, garnished with fresh herbs if desired.

Notes

  • For added flavor, marinate chicken in your favorite seasoning a few hours before cooking.
  • This recipe can be easily doubled for larger servings.
