  • 1/2 cup buttermilk
  • 1/4 cup unsalted butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup mini chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line a mini muffin tin with paper liners.
  2. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, mix buttermilk, melted butter, egg, and vanilla until combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in mini chocolate chips.
  5. Fill each muffin cup about 2/3 full with batter.
  6. Bake for 10-12 minutes, or until a toothpick inserted comes out clean.
  7. Let cool for a few minutes in the tin before transferring to a wire rack.
