Mini Cheesecakes Recipe

  • 1 cup graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup butter, melted
  • 16 ounces cream cheese, softened
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 cup sour cream
  • 1/4 cup sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, mix graham cracker crumbs, sugar, and melted butter until combined.
  3. Press the mixture into the bottoms of a muffin tin lined with cupcake liners.
  4. In another bowl, beat cream cheese until smooth. Gradually add sugar and vanilla, mixing well.
  5. Add eggs one at a time, mixing on low speed until just combined.
  6. Pour the cream cheese mixture over the crusts in the muffin tin.
  7. Bake for 20-25 minutes until the centers are set.
  8. Let cool before topping with sour cream mixture.
  9. For the sour cream topping, mix sour cream, sugar, and vanilla until smooth and spread on top of cooled cheesecakes.
  10. Chill in the fridge for at least 4 hours before serving.

Notes

  • Use different toppings such as fruit or chocolate for variety.
  • Mini cheesecakes can be made a day in advance for convenience.
