- 1 cup graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup butter, melted
- 16 ounces cream cheese, softened
- 1/2 cup sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 1 cup sour cream
- 1/4 cup sugar
- 1 teaspoon vanilla extract
- Preheat the oven to 325°F (160°C).
- In a bowl, mix graham cracker crumbs, sugar, and melted butter until combined.
- Press the mixture into the bottoms of a muffin tin lined with cupcake liners.
- In another bowl, beat cream cheese until smooth. Gradually add sugar and vanilla, mixing well.
- Add eggs one at a time, mixing on low speed until just combined.
- Pour the cream cheese mixture over the crusts in the muffin tin.
- Bake for 20-25 minutes until the centers are set.
- Let cool before topping with sour cream mixture.
- For the sour cream topping, mix sour cream, sugar, and vanilla until smooth and spread on top of cooled cheesecakes.
- Chill in the fridge for at least 4 hours before serving.
