- 2 ripe bananas
- 1/2 cup butter, softened
- 1 cup brown sugar
- 1 egg
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup chocolate chips (optional)
- Preheat your oven to 350°F (175°C).
- In a large bowl, mash the bananas.
- Add the softened butter and brown sugar, then mix well.
- Mix in the egg and vanilla extract until combined.
- In another bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry ingredients to the banana mixture, stirring until just combined.
- If using, fold in the chocolate chips.
- Spoon the batter into mini muffin tins, filling each cup about 3/4 full.
- Bake for 12-15 minutes, or until golden brown and a toothpick comes out clean.
