  • 1/2 cup butter, softened
  • 1 cup brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mash the bananas.
  3. Add the softened butter and brown sugar, then mix well.
  4. Mix in the egg and vanilla extract until combined.
  5. In another bowl, whisk together the flour, baking soda, and salt.
  6. Gradually add the dry ingredients to the banana mixture, stirring until just combined.
  7. If using, fold in the chocolate chips.
  8. Spoon the batter into mini muffin tins, filling each cup about 3/4 full.
  9. Bake for 12-15 minutes, or until golden brown and a toothpick comes out clean.
  10. Allow to cool before serving.
