2 boneless, skinless chicken breasts
8 ounces fettuccine pasta
2 tablespoons olive oil
3 cloves garlic, minced
1 cup heavy cream
1 cup chicken broth
1 cup sun-dried tomatoes, chopped
1 teaspoon Italian seasoning
1/2 cup grated Parmesan cheese
1/4 cup fresh basil, chopped
Salt to taste
Pepper to taste
Instructions
Cook the fettuccine according to package instructions; drain and set aside.
In a large skillet, heat olive oil over medium heat. Add the chicken breasts and cook until golden brown and cooked through, about 6-7 minutes per side.
Remove the chicken from the skillet and set aside. In the same skillet, add the minced garlic and sauté until fragrant.
Add the heavy cream, chicken broth, sun-dried tomatoes, and Italian seasoning. Stir to combine and bring to a simmer.
Slice the cooked chicken and return it to the skillet. Stir in the cooked fettuccine and Parmesan cheese, mixing well.
Season with salt and pepper to taste, and stir in fresh basil before serving.
