  • 1 medium red bell pepper, diced
  • 1 cup heavy cream
  • 4 cups seafood stock
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon cayenne pepper
  • 2 tablespoons fresh parsley, chopped
  • Salt to taste
  • Black pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add onion, garlic, and bell pepper; sauté until soft.
  3. Stir in paprika and cayenne pepper.
  4. Add seafood stock and corn; bring to a boil.
  5. Reduce heat and simmer for 10 minutes.
  6. Add shrimp and heavy cream; cook until shrimp are pink.
  7. Season with salt and black pepper.
  8. Garnish with fresh parsley before serving.

  • For a thicker bisque, use an immersion blender to puree a portion of the soup.
