- 9 lasagna noodles
- 2 tablespoons olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 zucchinis, diced
- 1 bell pepper, diced
- 1 cup spinach leaves
- 15 ounces ricotta cheese
- 2 cups mozzarella cheese, shredded
- 1/2 cup parmesan cheese, grated
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cups alfredo sauce
- Preheat your oven to 375°F (190°C).
- Cook the lasagna noodles according to package instructions until al dente.
- In a large skillet, heat olive oil over medium heat and sauté the onion and garlic until translucent.
- Add the zucchini and bell pepper, cooking until soft, then stir in the spinach until wilted.
- In a bowl, mix ricotta cheese, Italian seasoning, salt, and pepper.
- Spread a layer of alfredo sauce on the bottom of a baking dish.
- Layer 3 cooked lasagna noodles, a portion of ricotta mixture, sautéed veggies, mozzarella, and another layer of sauce. Repeat the layers.
- Top with remaining mozzarella and parmesan cheese.
- Cover with foil and bake for 25 minutes, then remove foil and bake for an additional 15 minutes until golden.
- Let it cool for a few minutes before serving.
