Loaded Veggie White Lasagna

  • 9 lasagna noodles
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 zucchinis, diced
  • 1 bell pepper, diced
  • 1 cup spinach leaves
  • 15 ounces ricotta cheese
  • 2 cups mozzarella cheese, shredded
  • 1/2 cup parmesan cheese, grated
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups alfredo sauce

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions until al dente.
  3. In a large skillet, heat olive oil over medium heat and sauté the onion and garlic until translucent.
  4. Add the zucchini and bell pepper, cooking until soft, then stir in the spinach until wilted.
  5. In a bowl, mix ricotta cheese, Italian seasoning, salt, and pepper.
  6. Spread a layer of alfredo sauce on the bottom of a baking dish.
  7. Layer 3 cooked lasagna noodles, a portion of ricotta mixture, sautéed veggies, mozzarella, and another layer of sauce. Repeat the layers.
  8. Top with remaining mozzarella and parmesan cheese.
  9. Cover with foil and bake for 25 minutes, then remove foil and bake for an additional 15 minutes until golden.
  10. Let it cool for a few minutes before serving.
