Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, combine graham cracker crumbs and melted butter; press into the bottom of a springform pan.
  3. In another bowl, beat cream cheese and sugar until smooth. Add lemon juice and zest, mixing well.
  4. Add eggs one at a time, beating well after each addition. Stir in vanilla.
  5. Pour the cheesecake mixture over the crust.
  6. Bake for 50-60 minutes or until set. Let it cool, then refrigerate for at least 4 hours.
