  • 1 cup graham cracker crumbs
  • 1/4 cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup dark chocolate, melted
  • 1 cup fresh raspberries

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. In a bowl, mix graham cracker crumbs and melted butter until well combined, then press mixture into the bottom of a springform pan.
  3. In a large mixing bowl, cream together the softened cream cheese and sugar until smooth.
  4. Add the vanilla extract and eggs, one at a time, mixing well after each addition.
  5. Fold in the melted dark chocolate until fully incorporated.
  6. Pour the cheesecake batter over the crust in the springform pan.
  7. Gently fold in raspberries.
  8. Bake in the preheated oven for 55-60 minutes or until the center is set.
  9. Allow to cool before refrigerating for at least 4 hours before serving.
