  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • 2 cups cooked brown rice
  • 1 cup black beans, drained and rinsed
  • 1 cup corn, drained
  • 1 lime, juiced
  • 1/4 cup fresh cilantro, chopped
  • 1/2 cup salsa

Instructions

  1. Heat olive oil in a skillet over medium-high heat.
  2. Season the flank steak with cumin, chili powder, garlic powder, and onion powder.
  3. Add the steak to the skillet and cook for 5-7 minutes on each side until cooked to your desired doneness.
  4. Remove the steak and let it rest before slicing.
  5. In the same skillet, add sliced bell pepper and onion; sauté until soft.
  6. Combine cooked brown rice, black beans, corn, lime juice, and cilantro in a large bowl.
  7. Top the rice mixture with sliced steak and sautéed vegetables before serving.
  8. Serve with salsa for added flavor.
