- 4 cups fresh peaches, peeled and sliced
- 1 cup granulated sugar
- 1 tablespoon lemon juice
- 2 cups all-purpose flour
- 1 cup old-fashioned oats
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup unsalted butter, softened
- 1 teaspoon vanilla extract
- Preheat the oven to 350°F (175°C).
- In a bowl, combine sliced peaches, sugar, and lemon juice. Set aside.
- In another bowl, mix flour, oats, baking powder, and salt.
- In a large mixing bowl, cream butter and sugar until light and fluffy.
- Add vanilla extract and the dry mixture to the butter mixture, mixing until crumbly.
- Press half of the crumb mixture into a greased baking dish.
- Spread the peach mixture over the crust.
- Sprinkle the remaining crumb mixture on top of the peaches.
- Bake for 35-40 minutes or until golden brown. Let cool before serving.
