Hearty Cheddar Garlic Herb Potato Soup

A rich and comforting potato soup with the flavors of cheddar, garlic, and herbs, enriched with turkey bacon for a delightful twist.

Ingredients

  • 2 cups diced potatoes
  • 1 cup shredded cheddar cheese
  • 4 slices turkey bacon, cooked and crumbled
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 tablespoons fresh herbs (thyme, parsley, or chives)
  • Salt to taste
  • Black pepper to taste

Instructions

  1. In a large pot, sauté onions and garlic until translucent.
  2. Add the diced potatoes and chicken broth. Bring to a boil and then reduce to a simmer.
  3. Cook until the potatoes are tender, about 15 minutes.
  4. Stir in the cream, cheddar cheese, turkey bacon, and herbs. Season with salt and pepper.
  5. Simmer for an additional 5 minutes and serve hot.

Notes

  • For a thicker soup, use an immersion blender to puree some of the potatoes.
  • Top with additional cheddar cheese and herbs before serving.
