Healthy Raspberry Cheesecake Bars

These healthy raspberry cheesecake bars are a delightful, wholesome treat that is easy to make.

Ingredients

  • 1 cup almond flour
  • 2 tablespoons coconut oil
  • 2 tablespoons honey or maple syrup
  • 1/4 teaspoon salt
  • 8 ounces cream cheese, softened
  • 1/4 cup Greek yogurt
  • 1/3 cup honey or maple syrup
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup fresh raspberries

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, combine almond flour, coconut oil, honey, and salt. Press this mixture into the bottom of a lined baking dish.
  3. Bake the crust for 10-12 minutes until golden.
  4. In another bowl, beat the cream cheese until smooth. Add Greek yogurt, honey, eggs, and vanilla. Mix well.
  5. Fold in the raspberries gently.
  6. Pour the cheesecake mixture over the baked crust.
  7. Bake for an additional 25-30 minutes until set.
  8. Let it cool, then refrigerate for at least 2 hours before slicing.

Notes

  • For best results, use fresh raspberries.
  • These bars can be topped with additional fruits or a dollop of Greek yogurt.
