- 1 cup almond flour
- 2 tablespoons coconut oil
- 2 tablespoons honey or maple syrup
- 1/4 teaspoon salt
- 8 ounces cream cheese, softened
- 1/4 cup Greek yogurt
- 1/3 cup honey or maple syrup
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup fresh raspberries
- Preheat the oven to 350°F (175°C).
- In a bowl, combine almond flour, coconut oil, honey, and salt. Press this mixture into the bottom of a lined baking dish.
- Bake the crust for 10-12 minutes until golden.
- In another bowl, beat the cream cheese until smooth. Add Greek yogurt, honey, eggs, and vanilla. Mix well.
- Fold in the raspberries gently.
- Pour the cheesecake mixture over the baked crust.
- Bake for an additional 25-30 minutes until set.
- Let it cool, then refrigerate for at least 2 hours before slicing.
