  • 2 eggs

  • 1 1/2 cups whole wheat flour

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a medium bowl, mash the ripe bananas until smooth.
  3. Stir in the peanut butter, honey, eggs, and vanilla extract until well combined.
  4. In another bowl, mix together the baking soda, salt, and whole wheat flour.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Pour the batter into the prepared muffin tin, filling each cup about 2/3 full.
  7. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
