  • 1 cup crushed pineapple, drained
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 cup vegetable oil
  • 4 large eggs
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp salt
  • 1 cup chopped walnuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix grated carrots, crushed pineapple, sugars, oil, and eggs until well combined.
  3. In another bowl, whisk together flour, baking powder, baking soda, cinnamon, and salt.
  4. Gradually blend the dry ingredients into the wet mixture until just combined.
  5. Fold in walnuts if using.
  6. Pour the batter into a greased cake pan and bake for 30-35 minutes.
  7. Check with a toothpick; it should come out clean when done.
