  • 4 medium potatoes
  • 6 slices turkey bacon
  • 1/4 cup olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup shredded cheese (optional)
  • 2 tablespoons chopped chives (for garnish)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Wash and slice the potatoes into thin slices without cutting all the way through.
  3. Drizzle olive oil over the potatoes and season with garlic powder, salt, and black pepper.
  4. Insert slices of turkey bacon into the cuts of the potatoes.
  5. Bake for 45-50 minutes until crispy and golden.
  6. If using, sprinkle shredded cheese in the last 5 minutes of baking.
  7. Garnish with chopped chives before serving.
