- 1 pound skirt steak
- 2 ears of elote corn
- 1 tablespoon olive oil
- 2 teaspoons chili powder
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon cumin
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 8 corn tortillas
- 1 cup crumbled queso fresco
- 1/2 cup chopped cilantro
- 1 lime, cut into wedges
- Preheat grill to medium-high heat.
- In a bowl, mix the olive oil, chili powder, paprika, garlic powder, cumin, salt, and pepper.
