Grilled Skirt Steak and Elote Tacos

A vibrant dish combining grilled skirt steak with elote-inspired flavors, making for a delicious twist on traditional tacos.

  • 1 pound skirt steak
  • 2 ears of elote corn
  • 1 tablespoon olive oil
  • 2 teaspoons chili powder
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 corn tortillas
  • 1 cup crumbled queso fresco
  • 1/2 cup chopped cilantro
  • 1 lime, cut into wedges

Instructions

  1. Preheat grill to medium-high heat.
  2. In a bowl, mix the olive oil, chili powder, paprika, garlic powder, cumin, salt, and pepper.
  3. Rub the spice mixture over the skirt steak and allow it to marinate for at least 15 minutes.
  4. Grill the skirt steak for about 4-5 minutes per side for medium-rare.
  5. While the steak is grilling, cook the elote corn on the grill until charred, about 10 minutes, turning occasionally.
  6. Once cooked, slice the kernels off the cob and mix them with queso fresco and cilantro.
  7. Warm the tortillas on the grill for about 30 seconds.
  8. Slice the skirt steak against the grain and assemble tacos with steak, elote mixture, and a squeeze of lime.

Notes

  • For extra flavor, let the steak marinate for a few hours.
