- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 medium carrots, diced
- 1 medium potato, peeled and diced
- 1 can (14 ounces) diced tomatoes
- 4 cups vegetable broth
- 1 teaspoon dried oregano
- 1 teaspoon cumin
- 2 tablespoons olive oil
- Salt to taste
- Pepper to taste
- In a large pot, heat olive oil over medium heat and sauté onions and garlic until translucent.
- Add carrots and potatoes, cooking for another 5 minutes.
