  • 2 medium carrots, diced
  • 1 medium potato, peeled and diced

  • 4 cups vegetable broth
  • 1 teaspoon dried oregano
  • 1 teaspoon cumin
  • 2 tablespoons olive oil
  • Salt to taste

Instructions

  1. In a large pot, heat olive oil over medium heat and sauté onions and garlic until translucent.
  2. Add carrots and potatoes, cooking for another 5 minutes.
  3. Stir in lentils, diced tomatoes, vegetable broth, oregano, and cumin.
  4. Bring to a boil, then reduce to a simmer. Cover and cook for 30-40 minutes or until lentils are tender.
  5. Season with salt and pepper before serving.
