  • 1 tablespoon vanilla extract

  • 8 ounces cream cheese, softened
  • 1/4 cup powdered sugar

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together the butter, granulated sugar, and brown sugar until smooth.
  3. Add the egg and vanilla extract, mixing well.
  4. In another bowl, mix the flour, baking soda, ginger, cinnamon, nutmeg, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring until combined.
  6. In a separate bowl, blend the cream cheese, powdered sugar, and vanilla extract until smooth.
  7. Drop spoonfuls of cookie dough onto a baking sheet, make a small indentation in the center of each, and fill with the cream cheese mixture.
  8. Bake for 12-15 minutes or until lightly golden.
  9. Cool on the baking sheet for a few minutes before transferring to a wire rack.
