  • 2 large eggs

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together the flour, baking powder, baking soda, spices, and salt.
  3. In another bowl, cream the butter and brown sugar until fluffy. Add eggs and vanilla, mixing well.
  4. Stir in the molasses followed by the flour mixture until combined.
  5. Pour the batter into a greased cake pan and bake for 25-30 minutes.
  6. Meanwhile, prepare the cheesecake layer by beating together cream cheese, sugar, and vanilla until smooth. Add eggs one at a time, mixing until just combined.
  7. Once the gingerbread layer has cooled, spread the cheesecake mixture evenly over it.
  8. Bake for an additional 30-35 minutes. Allow to cool completely before serving.
