  • 1 cup vegetable oil
  • 4 large eggs
  • 3 cups grated carrots
  • 1 cup crushed pineapple, drained
  • 1 cup chopped walnuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix together the flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In another bowl, whisk together the oil and eggs.
  4. Combine the wet and dry ingredients, then fold in the grated carrots, pineapple, and walnuts.
  5. Pour the batter into a greased cake pan.
  6. Bake for 30-35 minutes or until a toothpick comes out clean.
  7. Let cool before frosting.
