French Onion Funeral Potatoes

Deliciously creamy and cheesy, these Funeral Potatoes are enhanced with the savory flavors of French onion soup, turkey bacon, and chicken ham.

  • 2 pounds frozen hash browns
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 cup turkey bacon, cooked and crumbled
  • 1 cup chicken ham, diced
  • 1 can (10.5 oz) French onion soup
  • 1/2 cup diced onions
  • 1/4 cup butter, melted
  • 2 cups crushed cornflakes

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the frozen hash browns, sour cream, cheese, turkey bacon, chicken ham, French onion soup, diced onions, and half of the melted butter. Mix well.
  3. Spread the mixture into a greased 9×13 inch baking dish.
  4. Melt the remaining butter and mix with crushed cornflakes. Sprinkle this mixture evenly over the potato mixture.
  5. Bake for 45-50 minutes or until bubbly and the top is golden brown.
  6. Let cool slightly before serving.

  • This dish can be prepared a day in advance and stored in the refrigerator before baking.
