Fluffy Japanese Soufflé Pancakes

  • 4 large eggs
  • 60 ml milk
  • 30 g granulated sugar
  • 1 teaspoon vanilla extract
  • 100 g cake flour
  • ½ teaspoon baking powder
  • 1 tablespoon unsalted butter

Instructions

  1. Separate the egg whites from the yolks.
  2. In a bowl, whisk together the egg yolks, milk, sugar, and vanilla extract.
  3. Sift in the cake flour and baking powder, then mix until smooth.
  4. In another bowl, beat the egg whites until soft peaks form, then gradually add sugar and beat to stiff peaks.
  5. Fold the egg whites into the yolk mixture gently.
  6. Heat a non-stick pan over low heat and grease with butter.
  7. Pour batter into the pan and cover with a lid.
  8. Cook for about 4-5 minutes on each side until golden brown and fluffy.

Notes

  • For extra fluffiness, separate the eggs and whisk the whites until stiff peaks.
  • Use a non-stick skillet to prevent sticking.
