  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1/2 cup unsalted butter, melted
  • 3 large eggs
  • 1 tablespoon espresso powder
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips
  • 1/2 cup butter, softened
  • 2 cups powdered sugar
  • 1/4 cup coffee, brewed

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a bowl, mix sugar, cocoa powder, and flour together.
  3. In another bowl, whisk together melted butter, eggs, espresso powder, vanilla extract, and salt.
  4. Combine wet and dry ingredients until just mixed, then fold in the chocolate chips.
  5. Divide the batter among the cupcake liners and bake for 20-25 minutes.
  6. For the coffee buttercream, beat together softened butter, powdered sugar, and brewed coffee until creamy.
  7. Once the cupcakes are cool, frost them with the coffee buttercream.

Notes

  • For extra espresso flavor, add more espresso powder to the batter.
  • These cupcakes can be served warm or chilled.
