Egg Roll in a Bowl

A quick and easy weeknight dinner that combines the flavors of an egg roll with healthy ingredients.

Ingredients

  • 1 pound ground turkey
  • 4 slices turkey bacon
  • 1 tablespoon soy sauce
  • 2 cups coleslaw mix
  • 2 green onions, sliced
  • 1 teaspoon sesame oil
  • 1 teaspoon garlic, minced
  • 1 teaspoon ginger, minced
  • Salt and pepper to taste

Instructions

  1. In a large skillet, cook the turkey bacon over medium heat until crispy. Remove and set aside.
  2. In the same skillet, add the ground turkey and cook until browned.
  3. Add minced garlic and ginger, and cook for another minute.
  4. Stir in the coleslaw mix, soy sauce, and sesame oil. Cook until the coleslaw is tender.
  5. Chop the cooked turkey bacon and mix it in with the skillet contents.
  6. Season with salt and pepper to taste. Serve warm, garnished with sliced green onions.

Notes

  • For added heat, consider adding red pepper flakes.
  • Feel free to substitute the ground turkey with chicken or tofu for a vegetarian option.
