- 4 bell peppers
- 1 cup cooked rice
- 1 can black beans, rinsed and drained
- 1 cup corn, frozen or canned
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1 cup diced tomatoes
- 1/2 cup shredded cheese (optional)
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds.
- In a large bowl, mix the cooked rice, black beans, corn, cumin, paprika, and diced tomatoes.
- Stuff each bell pepper with the rice mixture.
- Place the stuffed peppers in a baking dish and cover with foil.
- Bake for 25 minutes. Remove the foil, sprinkle cheese on top, and bake for an additional 10 minutes.
- Remove from the oven and let cool slightly before serving.
