Easy Sweet Potato Egg

A delicious and nutritious bake featuring sweet potatoes, turkey bacon, and spinach.

Ingredients

  • 2 cups sweet potatoes, diced
  • 6 slices turkey bacon, cooked and crumbled
  • 2 cups fresh spinach
  • 6 large eggs
  • 1 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon garlic powder

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, sauté the diced sweet potatoes until softened.
  3. Add in the turkey bacon and fresh spinach, cooking until the spinach wilts.
  4. In a large bowl, whisk together the eggs, milk, salt, pepper, and garlic powder.
  5. Combine the egg mixture with the sweet potato mixture.
  6. Pour the mixture into a greased baking dish.
  7. Bake for 25-30 minutes, or until the eggs are set.
