Easy Spinach Mushroom Lasagna

A delicious and healthy take on classic lasagna with spinach and mushrooms.

  • 9 lasagna noodles
  • 2 cups fresh spinach
  • 1 cup mushrooms, sliced
  • 2 cups ricotta cheese
  • 2 cups marinara sauce
  • 1 cup mozzarella cheese, shredded
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions.
  3. In a pan, sauté the mushrooms until they are soft.
  4. In a bowl, mix ricotta cheese, spinach, garlic powder, Italian seasoning, salt, and pepper.
  5. Spread a layer of marinara sauce at the bottom of a baking dish.
  6. Layer 3 lasagna noodles, followed by half of the ricotta mixture, sautéed mushrooms, and a layer of marinara sauce. Repeat the layers.
  7. Top with remaining lasagna noodles and marinara sauce. Sprinkle mozzarella cheese on top.
  8. Cover with foil and bake for 25 minutes, then uncover and bake for another 10 minutes until cheese is bubbly.
  9. Let cool for 10 minutes before slicing.

Notes

  • For extra flavor, add fresh herbs like basil or oregano.
  • This lasagna can be made ahead and stored in the refrigerator before baking.
