- 9 lasagna noodles
- 2 cups fresh spinach
- 1 cup mushrooms, sliced
- 2 cups ricotta cheese
- 2 cups marinara sauce
- 1 cup mozzarella cheese, shredded
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Preheat the oven to 375°F (190°C).
- Cook the lasagna noodles according to package instructions.
- In a pan, sauté the mushrooms until they are soft.
- In a bowl, mix ricotta cheese, spinach, garlic powder, Italian seasoning, salt, and pepper.
- Spread a layer of marinara sauce at the bottom of a baking dish.
- Layer 3 lasagna noodles, followed by half of the ricotta mixture, sautéed mushrooms, and a layer of marinara sauce. Repeat the layers.
- Top with remaining lasagna noodles and marinara sauce. Sprinkle mozzarella cheese on top.
- Cover with foil and bake for 25 minutes, then uncover and bake for another 10 minutes until cheese is bubbly.
- Let cool for 10 minutes before slicing.
Notes
- For extra flavor, add fresh herbs like basil or oregano.
- This lasagna can be made ahead and stored in the refrigerator before baking.
