- 9 sheets lasagna noodles
- 2 cups ricotta cheese
- 4 cups fresh spinach
- 2 cups sliced mushrooms
- 3 cups marinara sauce
- 2 cups shredded mozzarella cheese
- 1 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt to taste
- Pepper to taste
- Preheat the oven to 375°F (190°C).
- Cook the lasagna noodles according to package instructions. Drain and set aside.
- In a skillet, sauté the mushrooms until golden brown. Add fresh spinach and cook until wilted.
- In a bowl, combine ricotta cheese, garlic powder, Italian seasoning, salt, and pepper.
- Spread a layer of marinara sauce at the bottom of a baking dish.
- Layer 3 lasagna noodles, half of the ricotta mixture, half of the spinach and mushroom mixture, and a layer of marinara sauce. Repeat the layers and finish with noodles and remaining sauce.
- Top with mozzarella and Parmesan cheese.
- Bake in the preheated oven for 30-35 minutes until bubbly and golden.
- Let it cool for a few minutes before serving.
Notes
- For a richer flavor, add ground beef or Italian sausage.
- You can make the lasagna ahead of time and refrigerate it before baking.
