Easy Spinach Mushroom Lasagna

A delicious and easy-to-make lasagna filled with fresh spinach and mushrooms, perfect for a comforting meal.

  • 9 sheets lasagna noodles
  • 2 cups ricotta cheese
  • 4 cups fresh spinach
  • 2 cups sliced mushrooms
  • 3 cups marinara sauce
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions. Drain and set aside.
  3. In a skillet, sauté the mushrooms until golden brown. Add fresh spinach and cook until wilted.
  4. In a bowl, combine ricotta cheese, garlic powder, Italian seasoning, salt, and pepper.
  5. Spread a layer of marinara sauce at the bottom of a baking dish.
  6. Layer 3 lasagna noodles, half of the ricotta mixture, half of the spinach and mushroom mixture, and a layer of marinara sauce. Repeat the layers and finish with noodles and remaining sauce.
  7. Top with mozzarella and Parmesan cheese.
  8. Bake in the preheated oven for 30-35 minutes until bubbly and golden.
  9. Let it cool for a few minutes before serving.

Notes

  • For a richer flavor, add ground beef or Italian sausage.
  • You can make the lasagna ahead of time and refrigerate it before baking.
