  • 1 cup fresh peaches, diced

  • 1/4 cup flour
  • 1/4 cup butter, cold and cubed

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together the flour, sugar, baking powder, salt, and cinnamon.
  3. In another bowl, whisk together the melted butter, eggs, and vanilla extract.
  4. Combine the wet and dry ingredients, then gently fold in the diced peaches.
  5. For the crumble, mix together the brown sugar, oats, flour, and cold butter until crumbly.
  6. Fill each muffin cup with the batter, then sprinkle the crumble on top.
  7. Bake for 20-25 minutes or until golden brown.
  8. Allow to cool before serving.
