Instructions

  1. Preheat your oven to 325°F (163°C).
  2. In a bowl, combine crushed graham crackers and melted butter. Press the mixture into the bottom of a muffin tin lined with paper liners.
  3. In a large mixing bowl, blend the softened cream cheese and powdered sugar until smooth.
  4. Add vanilla and eggs, mixing thoroughly before folding in the sour cream.
  5. Pour the cheesecake mixture over the crusts in the muffin tin.
  6. Bake for 20-25 minutes, or until the centers are set but slightly jiggly.
