- 1 cup crushed graham crackers
- 4 tablespoons unsalted butter, melted
- 16 ounces cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 1 cup sour cream
- 1/4 cup fresh fruit for topping
- Preheat your oven to 325°F (163°C).
- In a bowl, combine crushed graham crackers and melted butter. Press the mixture into the bottom of a muffin tin lined with paper liners.
- In a large mixing bowl, blend the softened cream cheese and powdered sugar until smooth.
- Add vanilla and eggs, mixing thoroughly before folding in the sour cream.
- Pour the cheesecake mixture over the crusts in the muffin tin.
- Bake for 20-25 minutes, or until the centers are set but slightly jiggly.
