  • 4 medium sweet potatoes
  • 6 strips turkey bacon
  • 2 cups heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup shredded cheese
  • 1 tablespoon fresh thyme
  • 1 tablespoon butter

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the turkey bacon until crispy, then chop it into small pieces.
  3. Slice the sweet potatoes thinly and arrange half of them in a greased baking dish.
  4. Sprinkle half of the bacon on top of the sweet potatoes.
  5. In a bowl, mix the heavy cream, salt, pepper, thyme, and cheese.
  6. Pour half of the cream mixture over the sweet potatoes and bacon.
  7. Layer the remaining sweet potatoes, bacon, and cream mixture, finishing with a layer of cheese.
  8. Dot the top with butter and cover with foil.
  9. Bake for 45 minutes, then remove the foil and bake for an additional 15 minutes or until golden brown.

Notes

  • For added flavor, you can use garlic or onion powder in the cream mixture.
  • You can substitute turkey bacon with regular bacon if desired.
