Decadent Hot Chocolate Cupcakes with Marshmallow Buttercream

  • 1/2 cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup buttermilk
  • 1/2 cup vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup hot water
  • 1 cup mini marshmallows

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with cupcake liners.
  2. In a large bowl, whisk together flour, cocoa powder, sugar, baking powder, baking soda, and salt.
  3. In another bowl, mix buttermilk, vegetable oil, egg, and vanilla extract until well combined.
  4. Add the wet ingredients to the dry ingredients and mix until just combined.
  5. Slowly stir in hot water until the batter is smooth.
  6. Fill cupcake liners about 2/3 full with batter and bake for 18-20 minutes.
  7. Let cool completely before frosting.
  8. For the marshmallow buttercream, beat butter until creamy, then gradually add powdered sugar.
  9. Mix in marshmallow fluff and a pinch of salt until fluffy and spreadable.
  10. Frost cooled cupcakes with the marshmallow buttercream and top with mini marshmallows.

Notes

  • For an extra chocolatey flavor, you can add chocolate chips to the batter.
  • Make sure the cupcakes are completely cooled before frosting to prevent the frosting from melting.
