Crispy Rice with Spicy Shrimp Salad

A delicious and quick recipe featuring crispy rice topped with a spicy shrimp salad.

  • 2 cups cooked rice
  • 1 pound shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 1 tablespoon chili paste
  • 2 green onions, chopped
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1/2 cup cucumber, diced

Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Add cooked rice and press down to form a cake. Cook until crispy.
  3. In another pan, sauté shrimp with chili paste until cooked through.
  4. Mix together shrimp, green onions, soy sauce, and sesame oil.
  5. Once rice is crispy, remove from heat and top with shrimp mixture and cucumber.

Notes

  • Adjust the spice level by adding more or less chili paste.
