Creamy Winter Vegetable Casserole

A delicious and comforting creamy casserole packed with winter vegetables and the savory flavor of turkey bacon.

Ingredients

  • 2 cups broccoli florets
  • 2 cups cauliflower florets
  • 1 cup sliced carrots
  • 1 cup diced potatoes
  • 1 cup cooked turkey bacon, crumbled
  • 1 cup cream of mushroom soup
  • 1 cup shredded cheese
  • 1/2 cup milk
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and Pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the broccoli, cauliflower, carrots, potatoes, and turkey bacon.
  3. In another bowl, mix the cream of mushroom soup, shredded cheese, milk, garlic powder, onion powder, salt, and pepper.
  4. Pour the cheese mixture over the vegetables and mix well.
  5. Transfer the mixture to a greased baking dish.
  6. Bake for 30-35 minutes or until the vegetables are tender and the top is golden brown.
  7. Let it cool for a few minutes before serving.

Notes

  • This casserole can be made ahead of time and stored in the fridge before baking.
  • You can substitute turkey bacon with regular bacon if desired.
