Creamy Pumpkin Tiramisu

  • 1 cup pumpkin puree
  • 8 ounces mascarpone cheese
  • 1 cup heavy cream
  • ¾ cup powdered sugar
  • 2 teaspoons vanilla extract
  • 1 teaspoon pumpkin pie spice
  • 24 ladyfinger cookies
  • ½ cup brewed coffee, cooled
  • 2 tablespoons coffee liqueur (optional)

Instructions

  1. In a large bowl, whisk together the pumpkin puree, mascarpone cheese, heavy cream, powdered sugar, vanilla extract, and pumpkin pie spice until smooth.
  2. In another bowl, combine the brewed coffee and coffee liqueur.
  3. Dip each ladyfinger into the coffee mixture for a few seconds.
  4. Layer half of the dipped ladyfingers in the bottom of a dish.
  5. Spread half of the pumpkin mixture over the ladyfingers.
  6. Repeat the layers with the remaining ladyfingers and pumpkin mixture.
  7. Chill in the refrigerator for at least 4 hours before serving.

Notes

  • For a richer flavor, let the tiramisu sit overnight.
